Peach Bread for the Appetizer!

After going to the farm I needed to find uses for all the produce that we picked.  Since I had already picked and preserved the peaches I planned to do, picking a few extra peaches on Saturday made me wonder – “what am I going to do with just a few peaches”.  To the web I went in search of peach recipes and I found one that looked delicious on http://alifelesssweet.blogspot.com/2009/07/meatless-monday-peach-bread.html and decided that was how I was going to use my peaches!  So now I had the dessert planned for our dinner last night, what to do for the dinner?  I still had fresh picked green beans and corn – so of course they would be used, but what else?  Homemade veggie burgers – yes – that was it – I have not made these in over a year.  With this being what most consider the last hurrah of summer, I called our neighbors and said – want to do dinner together?  The answer – yes!

 

Veggie Burger Recipe – tell the kids that they are made with peanut butter and they will try them and then they usually end up loving them!

Ingredients

1- 15 oz. can black soy beans, drained (if you can’t find these I am sure regular black beans would work)
1/2 cup bread crumbs
2 cloves garlic, minced (or more – my philosophy is that you can never have too much garlic!)
1 Tbl. fresh ginger, grated
1 Tbl Tamari sauce
1 Tbl smooth peanut butter (or you can use soy butter)
2 Tbl fresh cilantro, chopped (you don’t have to be exact)
1/2 cup onion, chopped

1. Place all the ingredients into a food processor and blend until somewhat smooth.

 

2. Scoop some of the mixture into your hand and form into a patty.  I find that it works better if I make all the patties, place on a wax paper lined cookie sheet and place in the refrigerator for a at least 30 minutes.  They seem to set better this way.  You can also freeze the patties for future use. Depending on the size of the patties you can get 6 – 8 patties out of the recipe.

3. Cook either on the grill or place about 1 Tbl of olive oil in a pan and fry gently until browned on both sides.

I then washed and cut up the green beans, placed them in foil added chopped up garlic, some olive oil and sea salt and closed up – ready for the grill.

Now for the dessert, or so I thought!

Peach Bread -( thanks to A Life Less Sweet blog – link above)

Ingredients

2 cups flour (I used all unbleached white, but you could mix with wheat)
1/2 cup sugar
1/2 cup packed brown sugar
1/8 tsp salt
1 tsp baking soda
2 Tbl falxseed meal (optional – I used)
2 cups very ripe, mashed peaches (about 5 medium )
1 egg slightly beaten
2 Tbl butter, melted
1/2 cup raisins or nuts (optional – I did not use)

1. In a bowl mix flour, sugars, salt and baking soda – I also added some cinnamon.

2. Peel, cut and mash the peaches in a large bowl.  I used the 5 peaches that I had ripe and did not measure out 2 cups – I think I probably had more than 2 cups because the bread was very, very moist – but held together.

 

3. Melt the butter.

4. Slightly beat the egg.

5. Add the butter and egg to the peach bowl – I added a splash of vanilla too!  This is when you would stir in the raisins or nut, if using.

6. Add the flour mixture to the peaches and stir until combined.

7. Pour the batter into a 9×5″ greased loaf pan and let stand for 20 minutes.

8. Preheat the oven to 350 degrees, bake for 35 – 45 minutes, mine was done in 35 minutes.

9. Cool bread in pan for 15 minutes, remove from pan and finish cooling on a wire rack.

We packed all of our goodies up and off to the neighbors we went.  When we walked in we could smell the peach cobbler that had just come out of their oven.  I showed them the bread and we all decided that we were starving and since we had two peach items that the bread should be the appetizer!  I don’t have to say that the kids did not argue – a dessert before the meal and then a different one waiting for after dinner – what could be better?!

Dinner and Dessert

After a day of picking at a local farm with some friends it was home to cook dinner and use some of our freshly picked produce.  I had wanted to start the pear preserving, but we spent longer at the farm and by the time we got home I was too tired to start anything but dinner.

We had fun and picked grapes, mustard greens, beans, corn, raspberries, pears, apples and peaches.  Stella poked her eye on Friday at a friends house so she wore her pirate patch all day – I am sure people just thought that she was playing pirate, but she didn’t have all of her depth perception – funny, but not!

Dinner was roasted potatoes (purple, red and Yukon), garlic and green beans and then pan seared scallops marinated in terriyaki.  I cut up the potatoes and garlic, placed in a baking dish, poured some olive oil on, stirred and then put some sea salt on top – place in a 400 degree oven for 20 minutes.  After 20 minutes I stirred the potatoes, put them back into the oven for another 10 minutes and turned the heat down to 350 degrees. I then cleaned and cut the green beans, which were added to the potatoes and I baked them for another 25 minutes.

Dinner is served!

 

 

 

For dessert I made Apple Crisp, which brings back memories of my Grandmother – I always remember eating it at her house.

Apple Crisp

Ingredients

5 – 6 cups sliced apples, pared or unpared (we used Honey Crisp that we had just picked)
1 cup flour
1/2 – 1 cup sugar (I used a little over 1/2 cup since the apples were sweet already)
1 tsp. baking powder
1/4 tsp salt (I use sea salt)
1 unbeaten egg
1/3 cup butter, melted and cooled
Cinnamon

1.Grease a 7 x 11 or 9 x 11 inch baking dish – I use the butter wrapper.

2. Wash, peel and cut the apples and place in the baking dish.

 

3. Mix the flour, sugar, baking powder and salt in a bowl.  Add the egg and them mix with a fork until it looks like crumbs.

4. Preheat the oven to 350 degrees.

5. Sprinkle the crumb mixture over the top of the cut apples.

6. Sprinkle cinnamon over the top.

 

7. Bake for 30 – 40 minutes, checking after 30 minutes.  Take out and let cool, serve warm.  It is also good cold.  Serves 6 – 8.  The crunch and the softness of the apples compliment each other to perfection!

Oh the Aroma!

I love the smell that baking goods fill the house with, even long after they come out of the oven.  I had some very ripe bananas, so decided to make banana muffins.  I usually make banana bread, but decided that I wanted some with chocolate chips for a dessert treat- therefore muffins it was.

Banana Bread (muffins) – this recipe will make 1 (8x4x2 1/2″) loaf or about 21 muffins

Ingredients

1/2 cup butter (softened)
1 cup sugar or 3/4 cup honey (your choice, great either way)
1 egg
3/4tsp. baking soda
1 1/2 cups flour (can use either unbleached white or wheat or a mixture)
1 Tbsp. baking powder
1/2 tsp. salt
Vanilla (optional, I just pour some in)
Cinnamon (optional, I just sprinkle some in)
4 mashed bananas (the original recipe calls for 3, but I think 4 makes it moister)
Chocolate chips or nuts (optional)

1. Cream butter and sugar (honey) until light and fluffy.

2. Beat in egg, vanilla and cinnamon, if using.

3. Add in dry ingredients.

4. Mash the bananas in a separate bowl.

 

5. Combine the bananas with the dry ingredient mixture.

6. Grease and flour a 8x4x2 1/2 loaf pan or place paper liners in a muffin pan.  Preheat oven to 350 degrees.

7. Pour batter into loaf pan or muffin tins.  I filled 12 muffin cups with the regular batter than added some chocolate chips and filled another 9 muffin cups.  One muffin pan was not completely used so you will need to fill the other cups with water.

8.  Bake the loaf pan for 50 – 60 minutes, checking at 30 minutes and continue checking about every 10 minutes to prevent over cooking and the top burning.  For muffins, bake about 20 minutes, checking after 10 minutes and then every 3 – 4 minutes.

9.  Take out of the oven and let cool.  Enjoy, we certainly did!

Going Retro – Learning Macrame

First I need to start off with saying that we did get our electric back yesterday – I was amazed.  Five trucks, plus 3 supervisors showed up and the problem was fixed within minutes.  I received a call this morning from Con Ed, they had read my blog. First thought was that they were going to ask me to delete it and then WOW, they read my blog.  I spoke with a very nice woman who told me that they were taking this seriously and were going to look into the problem that we have with our transformer and with the way the situation was handled by the agents – impressive.  I did tell her that being without power for the week made me realize that there were other ways that I could simplify my life even more and that I was going to try some things starting in October – so stay tuned!

I cleaned out the freezer and refrigerator, hoping to be able to save some of the fruit that I picked and froze for winter use – keeping my fingers crossed.  I rinsed the fruit, placed them back on cookie sheets and put in the freezer – we will see.  Also was able to do some laundry and hang that out to dry.  I LOVE my new sweeper – it works incredibly on the area rugs with getting up the dog hair – I wish I had gotten one years ago!

After going to the park to practice riding Stella’s bike – she is really getting good with riding without training wheels, we came home and decided we were going to try a new craft.

I was never a brownie or a Girl Scout – so I never learned how to macrame when I was a kid – I think I learned another knot that we used to make the bracelet’s with the plastic cord, but I do not remember how to do that.  Out came the computer, macrame was typed into the search line and off we went.  We found one site that had some patterns, but then it was on to YouTube.  We found a couple of really good video’s, but used this link and start and stopped it until we were done: http://www.youtube.com/watch?v=KeVb8Bms3uw . It was really fun learning a new craft with Stella.

I searched the house for an item for each of us to place the hemp rope on so that we could start our chokers, then it was a search for beads that had holes large enough for 2 pieces of the hemp to go through – we ended up using mostly wooden beads from another kit Stella had.

Need to go pick up my items from my friend’s freezer and fridge and then to use the bananas that went bad this week since we were trying to eat the cold food before it went bad!  Will make some banana muffins and some chocolate chip banana muffins for dessert, yum!

Con Edison – Really?????

We have been without power since 2am Sunday morning and were told that we should have it restored by 11:59pm today – I am not keeping my fingers crossed on that one.  There are 19 homes on our block that are without power and last night most of us were called by ConEd to tell us that our service had been restored, hmmm…

When I got my call I pressed “2” since I was not satisfied that the problem has been resolved.  I spent 40 minutes on the phone with one of their agents who insisted that I must have power since her system showed it had been restored.  I stepped outside to take the call so that I could see my bill and give whatever information they needed.  I then started hearing others on their cell phones having the same argument that I was having.

First I was told that we were part of the problem at N. Broadway and Highland that had been fixed so therefore we had power.  I informed the agent that we were over a mile and a half from that location and that just because they fixed that problem did not mean our problem was fixed.  She then, again, insisted that I have power and that I just needed to trip my circuit breaker.  I told her that I was standing outside and that no house on the block had lights nor did we have street lights.  I was then told that just because I did not have power downstairs that I should go upstairs and my lights should work – are you kidding – part of my house was restored but not the other.  This went on and on, along with her telling me that I must be part of this and that problem area and they were fixed so we must be fixed.  I asked her if she knew the area and she told me that she was looking at a map – I asked her if she knew how to read it and could she tell that the areas that were up were no where near us.  She told me that she understood that they were not near us but that did not mean that the problem were not related.  I asked her how then could the block in front, back and both sides of us have power but not us, but that we were part of a problem in another town.  I finally gave up, along with most of the neighbors.  I am not sure why they would argue with us and tell us we had power when were at the location and definately did not have power.

I called back, but cannot call the 800# because the area code of my cell phone is not from this area – so I need to call the New York City office and hold forever.  I at least was able to speak with a competant person, who did another ticket for us.

This morning I received another call from ConEd, less than 12 hours from when I spoke to them lat night, telling me that my power was restored, again I pressed “2”.  Another ticket was put in for the original Sunday emergency ticket and I was told that they are still hoping for power to be restored by 11:59pm tonight.

Less than 10 minutes later I recieved another call from ConEd, again telling me that my power had been restored and again I pressed “2”.  This was for the ticket from last night.  This woman again insisted that I must have power and that it must be my circuit breaker because the larger area had had power restored.  I told her that I was not going to do this again and that maybe she should make a note to have a ConEd truck come down our block, since no truck has come yet.  We have seen 8 trucks drive by us this morning – would be nice if one of them turned down our block.

Going out to buy more candles not knowing when we will get power back and then it is time to clean out the freezer and get the water up.  Oh, yeah – thanks ConEd for offering ice to people who lost power – only it was 30 minutes away and we could not get there due to roads being closed, and actually glad we did not go since they ran out of ice before giving it out to all that needed it!

Filling the Time

We still do not have electricity, but I cannot really complain about our hardship when I see what the storm did to so many others.  Yes, we are inconvenienced, but at least we did not loose our possessions, home, car – it is heart breaking to read the stories and to see the pictures.

takes some thought.  This morning I really took a look at the garden – and we will not be having a fall garden – the rain washed away the soil and killed some plants and the wind took  a toll on other plants. I will try and do some seeds tomorrow, but the growing season is only about 60 days – so not a lot of time.  I will try again for spinach and kale – if it comes up I will cover and then have an early crop in the spring.  I will definitely do lettuce and arugula and I hoping that I will not forget this year to plant the garlic.  Each year I sprout the garlic and then the next thing that I know there is snow on the ground and I forgot to plant the garlic!

A little surprise under the leaves – a squash! And looking into the compost – surprised to see what is growing inside and out – more sweet potato plants.

 

We have gone to the park, taken the dog for many walks, gone to the library, read books, played and knitted.  I usually have several books sitting on my night stand – I like variety and something that fits my mood – knitting is pretty much the same.  I have 3 projects going: felted knitted bag, knitted faceless doll and a felted knitted water bottle holder.  I have never felted anything that I have knitted – so this is a first, but something that I have wanted to do for awhile.  The doll is a Christmas gift and depending how the felting goes so will the other 2 projects.

Last night was spent drinking wine by candlelight and catching up with girlfriends that live on the block.  None of us have lights – the next thing we knew it was after midnight!  For me it is hard to tell the time during the evening.  I have noticed that the stars are easier to see – no street lights or light pollution – so good things.  I really like the candles at night and wish I could do my oil lamps, but was out and could not find any before the storm – but this may be a continuing thing at night when we finally do get our power turned back on.

After the Storm

We did all our preparations, helped the neighbors and then waited.  This kids made their rounds between the houses during the day, they were all scared and wondering what was going to happen.  Several of our neighbors were on vacation so several of us did what we could to get their items off porches, stairs, yards.  It rained for most of the day, but the real rain started about 7:30.  We have large trees around us and there was concern that trees would be coming down left and right because of how saturated the ground was – everything was moved down to the living room and we set up one big bedroom – Stella on a blow up mattress, me on the couch, the cat above my head and the dog between Stella and me on the rug. Stella was having a hard time falling asleep, so we ended up watching 2 movies and then she was out in about 30 seconds.  I waited until about midnight to take the dog out since they were saying that the worse of the storm was going to be here between 8am – 10am – as we were walking out the front door I looked out on the road and there was a skunk – I quickly got Bernie back into the alcove but I got the umbrella stuck on the door – thinking this is the last thing that I need is to get sprayed by a skunk – I finally got back inside.  I watched until the skunk disappeared and then we quickly ran up the hill – on the way back down we did see the skunk crossing the street so we went over to the other side and waited – it finally went under the fence and into my backyard – we made a mad dash back into the house.

The power went out about 2am Sunday morning and we are not expected to get power back until Thursday. We woke up expecting the worst of the storm, but it never came. It was eerie, at about 10am the rain and wind stopped, it was so calm.  I spent some of the day tying up the flowers that had fallen over and then knitting with Stella.  The wind started picking up in the afternoon and was worse than the wind during the storm.  Another evening sleeping in the living room. We watched a movie by candlelight when we could no longer see to knit.

Today I offered to kid-sit for a friend in exchange for the ability to shower and charge up computers and cell phone, my friend was also very kind to make room in her freezer and fridge for some of our items.  Today was the first day that I was able to see any pictures of what the storm had done, along with trying to get over the my friends house – making several detours.

Went to the library to get a movie for tonight – saw everyone – people who did not have power or could not make it to work were all working in the library – every chair was taken!

The Preparations Have Begun

As of last night the news was that Irene would hit the New York area on Saturday and could potentially be a category 3, so I got up this morning and got all my chores out of the way.  I finished unpacking from our vacation, did 4 loads of laundry, cleaned the house, gave the dog a bath and so far have put away 2 loads of laundry.

I had already gone to the grocery yesterday, but forgot to get cat food and if we do loose power as they keep saying we will – I was afraid that I would run out and the cat would not be happy.  Off to the grocery I went again – I have never seen the parking lot so full and I had to wait for a parking space.  I picked up cat food, matches (could not remember if I had any) and a plug for my neighbors tub – I am sure the person behind me was thinking is she crazy.

At home it has been bringing in the garden items, yard waste cans, bags of mulch and dirt, the patio table chairs,etc.  The patio table is too wide to go down the stairs to the basement so that will have to come into the house, but at least that gives me a place to put all the potted plants on.  My neighbor and I are trying to decide where to park our cars – there is a tree on the side of the driveway and if it comes down – how will it fall.  August has seen more rain than normal and the ground is already saturated, so anymore rain will not soak into the ground but run off, so flooding and flash flooding are real concerns along with trees coming down since the root systems are weak.

I just took pictures of all my sunflowers – so I can remember how they looked all in bloom and so tall – as I came in to download them I turned the tv on to get an update.  They are now saying the storm is not as strong as they thought it would be, but we still need to prepare just like it was a category 3 or 2.  The water, wind and down trees are the main concern. They are also saying that the pressure plus the storm is the making of the perfect storm that was seen in days gone by – that most of us do not remember.

I have been filling up the water bottles and making ice – so that if the power does go out I can try and save what is in the freezer and the refrigerator.  I have also brought up the litter box and hope I can find the cat and get her inside.

The amazing thing for the city that never sleeps as of noon tomorrow all public transportation will shut down!

Need to get back to preparations and I am hoping that I will be able to harvest some more lavender today – not sure what will be after the storm.

Catching Up

A couple of days of vacation works wonders for every aspect of your life.  I had the best intentions to blog while away, but after the first day and it taking me 3 hours to do one post – I opted to wait and post upon my return.

We stayed in a great location and an amazing house – very 1970’s, but wonderful and very welcoming.  The house had many interesting features – a sailing mast hung from the ceiling, rope as railings, sails for dividers, a boat bottom as a coffee table, an outdoor shower and an incredible view of the ocean.  Sitting out on the deck it sounded like the waves crashing were echoing down the shoreline.  One night an owl hooted all night long.  We could walk to the ocean, the kettle ponds and throughout the national seashore.  Inside the house were hung long stakes as chimes and windows everywhere!

 

 

One of the exploring days found us in search of the kettle ponds, mostly located in Wellfleet.  We walked along dirt roads and just kept going to the left – Stella was a trooper, the walk was long and then there was the return, but the reward of swimming in one of the ponds was worth it. The ponds were created by receding glaciers that dug into the land and left behind depressions that were filled with the melt water of the glaciers.  The kettle ponds do not have any rivers feeding them, they are essentially exposed water tables and precipitation helps to keep the water level, but because the soil is mostly made up of permeable sand, water is able to flow through it.  The water is so clear and much warmer than the ocean.  You can swim in one for awhile and then walk to another one.  The days we did make it to the ponds – it always seemed that the wind was blowing more there than anywhere else – which made the getting out a chilling experience!

We did make it the bay one day and it was low tide – so walking along the shore was great fun.  Finding hermit crabs, crabs, small fish and many shells in the shallow water.  A couple of horseshoe crab shells were a fun addition to our other finds.

One morning as I was enjoying the view and the company of one of the guests – I was standing by the picnic table.  In mid-sentence a bee flew up my shorts and before I knew it my shorts were at my ankles – I had just met Marcus 2 days earlier and to tell the truth it would not have mattered if I was going commando – those shorts were coming down.  I was not stung and the bee flew out the top of my shorts on their way down to my ankles.  Marcus just stared at me, wondering what I was doing, can’t blame him.  I did have my bathing suit bottoms under my shorts!

The last day it was off to the ocean and to Provincetown and to the penny candy store that

I had gone to as a kid.  The water temperature that day was a balmy 62 degrees – Stella never got out of the water and tried to convince me to come in an enjoy the water with her – I made it up to my lower calves.  She told me that I could hold her hand and squeeze as hard as I needed to like she does to me when she is getting a shot – I told her that I did not think that would work, she wanted me to try anyway – I don’t think I need to tell you but it just wasn’t working for me.  I know as  I a kid I was in that water all day long too, but I can’t do it now.  The evening was topped off my going to Arnold’s and enjoying a lobster roll, clam chowder and some of the best onion rings.  Stella was seafooded out and opted for a peanut butter and jelly sandwich.  We all enjoyed the meal and each others company.  A great time I think was had by all!

We are now back in New York, unpacked and will prepare tomorrow for the hurricane that is suppose to hit on Saturday and Sunday.  Not sure if they are making too much of the storm, but better to be safe than sorry.  We did miss the earthquake that hit while we gone.  I am thinking that mother nature is trying to tell us something!

Vacation, Need I Say More

We were invited to spend a couple of days at the Cape (Cape Cod for those who aren’t from the East Coast).  I love the Cape.  As a child we spent many a summer vacationing on the Cape -I also remember that I used to get into the car in my pajamas in the dark and would awake and be on the Cape. I have great memories of camping with my grandparents and the best part was to go to the path leading to the beach and pick wild blueberries to make blueberry pancakes for breakfast!

Yesterday morning it was off to the beach – Stella could not wait.  We went to the ocean side of the Cape – and the water was so cold that it took my breath away.  It was fun to see the seals pop their heads up. Stella on the other hand never left the water and got really mad at me for not coming in and helping her learn how to ride her boogie board – to the point were at one point she did not even speak to me.  The water was dirty with seaweed – Stella would get out of the water and you could see it all inside her suit.  We went to the bathroom and as she was taking her suit off – it was plop, plop, plop – seaweed falling everywhere. At the end of the day we were calling her the seaweed princess and it took several washings of her hair and a good brushing to get all of it out!

We decided that we would cook at home tonight – we went to the local fish market and got some good looking fish and then to the farm stand to get some local produce to add to the produce that I had brought from the garden (zucchini, yellow squash and beans).  We bought a pint of blueberries and did not even make it out of the parking space, so back I went to the farm stand to get more blueberries for later. When we got back we all got busy in the kitchen doing all the prep work – we got the best mesculan mix and the taste of the different lettuces were incredible.

It was time to fire up the grill. First we cooked all the veggies, then the clams and then the fish – having a very enjoyable time while we cooked and waited for our feast to be completed!

 

 

 

The night was topped off with by our fabulous meal, good company, good conversation, laughter and fun!  What really could be better – I am not sure.  Followed by a game of poker, perfect!
