Peach Bread for the Appetizer!

After going to the farm I needed to find uses for all the produce that we picked.  Since I had already picked and preserved the peaches I planned to do, picking a few extra peaches on Saturday made me wonder – “what am I going to do with just a few peaches”.  To the web I went in search of peach recipes and I found one that looked delicious on http://alifelesssweet.blogspot.com/2009/07/meatless-monday-peach-bread.html and decided that was how I was going to use my peaches!  So now I had the dessert planned for our dinner last night, what to do for the dinner?  I still had fresh picked green beans and corn – so of course they would be used, but what else?  Homemade veggie burgers – yes – that was it – I have not made these in over a year.  With this being what most consider the last hurrah of summer, I called our neighbors and said – want to do dinner together?  The answer – yes!

 

Veggie Burger Recipe – tell the kids that they are made with peanut butter and they will try them and then they usually end up loving them!

Ingredients

1- 15 oz. can black soy beans, drained (if you can’t find these I am sure regular black beans would work)
1/2 cup bread crumbs
2 cloves garlic, minced (or more – my philosophy is that you can never have too much garlic!)
1 Tbl. fresh ginger, grated
1 Tbl Tamari sauce
1 Tbl smooth peanut butter (or you can use soy butter)
2 Tbl fresh cilantro, chopped (you don’t have to be exact)
1/2 cup onion, chopped

1. Place all the ingredients into a food processor and blend until somewhat smooth.

 

2. Scoop some of the mixture into your hand and form into a patty.  I find that it works better if I make all the patties, place on a wax paper lined cookie sheet and place in the refrigerator for a at least 30 minutes.  They seem to set better this way.  You can also freeze the patties for future use. Depending on the size of the patties you can get 6 – 8 patties out of the recipe.

3. Cook either on the grill or place about 1 Tbl of olive oil in a pan and fry gently until browned on both sides.

I then washed and cut up the green beans, placed them in foil added chopped up garlic, some olive oil and sea salt and closed up – ready for the grill.

Now for the dessert, or so I thought!

Peach Bread -( thanks to A Life Less Sweet blog – link above)

Ingredients

2 cups flour (I used all unbleached white, but you could mix with wheat)
1/2 cup sugar
1/2 cup packed brown sugar
1/8 tsp salt
1 tsp baking soda
2 Tbl falxseed meal (optional – I used)
2 cups very ripe, mashed peaches (about 5 medium )
1 egg slightly beaten
2 Tbl butter, melted
1/2 cup raisins or nuts (optional – I did not use)

1. In a bowl mix flour, sugars, salt and baking soda – I also added some cinnamon.

2. Peel, cut and mash the peaches in a large bowl.  I used the 5 peaches that I had ripe and did not measure out 2 cups – I think I probably had more than 2 cups because the bread was very, very moist – but held together.

 

3. Melt the butter.

4. Slightly beat the egg.

5. Add the butter and egg to the peach bowl – I added a splash of vanilla too!  This is when you would stir in the raisins or nut, if using.

6. Add the flour mixture to the peaches and stir until combined.

7. Pour the batter into a 9×5″ greased loaf pan and let stand for 20 minutes.

8. Preheat the oven to 350 degrees, bake for 35 – 45 minutes, mine was done in 35 minutes.

9. Cool bread in pan for 15 minutes, remove from pan and finish cooling on a wire rack.

Beautiful! Can you smell it?

We packed all of our goodies up and off to the neighbors we went.  When we walked in we could smell the peach cobbler that had just come out of their oven.  I showed them the bread and we all decided that we were starving and since we had two peach items that the bread should be the appetizer!  I don’t have to say that the kids did not argue – a dessert before the meal and then a different one waiting for after dinner – what could be better?!

Margaritas in hand, off to the grill we went.
