The First Hike Of The Season

The first day of Spring was March 20 – but with our weather you would not think so.  On Thursday, April 4 the weather changed and we were under a winter storm warning.  We had sleet, freezing rain, snow and at times all of it mixed together coming down.  The roads became slick, as I found out driving home – thinking that I would not make it up the windy hill – but fish tailing all the way I made it to the top.  By the time the snow stopped you could not see the grass on the lawn.  I was not happy – I am so over winter and want the warmer weather to be upon us.  Friday there was no school, another snow day.

Saturday morning we had to run some errands, but the sun was shining and by mid-day the temperatures were in the 60’s!  I needed to be out in nature.  Packing up some snacks and our water bottles – we headed down the mountain to Rocky Knob.  The trail follows along the river.  The sounds of the water and the birds was lovely, the butterflies were so colorful and being out in nature spectacular.  Stella wanted to go swimming and I told her that she had to wait until we were on our way back.


Along the way we stopped and sat on some rocks, eating our snacks and checking out all the different trees and how some of them had grown all twisted.  Stella liked using the binoculars to see inside caves, inside tree roots or to just check out things at a closer viewpoint.

Our goal was to make it to the house in the woods and we did.  So wonderful – I want to live in this house in the middle of the woods with running water in the front yard – perfect.  As we were checking out the barn we came across a snake – luckily it was dead – but it was big!

We headed back to the car, with Stella hoping that we would stop in town on our way home for an ice cream cone.  Being the mom that I am – I let her keep thinking that it was a long shot that we would stop for ice cream – knowing that we would! As promised on the way back I told her she could get in the water, but that she might want to feel the water temperature before taking the plunge- even though it looked inviting it was still winter/spring.  After feeling the water she decided she would wait and go in another time. The hike was the perfect afternoon outing! And yes, we did stop for ice cream – sitting on a bench in town in the sun, enjoying each others company and of course people watching!

Coconut Macaroons – A Favorite

Over the holidays I made paleo coconut macaroons and while they were good they were not exactly what I was looking for in a macaroon.  Really I wanted my macaroon to stay together better and to have an airier texture.  This recipe fit all that I was looking for!  They were gone in about 2 days – so I think others liked them too!

Coconut Macaroons (thanks goes to Penny Ann Habek )

Ingredients

1 1/3 cups unsweetened coconut flakes
1/3 cup organic sugar
2 Tbl flour (I used sprouted flour)
1/8 tsp sea salt
2 egg whites (add the yolks to your next batch of scrambled eggs – yummy!)
1/2 tsp vanilla

1. Preheat your oven to 325 degrees.

2. In a bowl combine the coconut, sugar, flour and salt.

3. Stir in the egg whites and vanilla – mix well.

4. Line a cookie sheet with parchment paper.

5. Drop by the spoon onto the line cookie sheet.

6. When I had about half of the batter left – I decided to put about 1 tsp unsweetened cocoa powder in the batter.  Knew these were good without it, but wanted to do an experiment.

7. Bake for about 18 t0 20 minutes – they will get a golden brown.

8. Cool on a wire rack.  Makes about 1 1/2 dozen macaroons

Kids Craft Corner – Big Baby Gets A New Dress

I have written about Big Baby before, but to give just a little bit of history – Big Baby was given to Stella for her first birthday and she has been a favorite doll ever since.  Big Baby was Stella’s first American Girl Doll and she has been through a lot, even under going surgery a couple of times! A recent afternoon we were sitting out on the deck with our cousin and a conversation meandered here and there and we ended up talking about knitting and sewing.  Over the course of several winters I have tried to teach Stella to knit, but have never really succeeded, but she does love to sew, by hand – she is afraid of the sewing machine.  Our cousin asked her if she had made any clothes for big baby, the answer being no and asked why not?  Well this was all that Stella needed and for several days the questions were do you have a sewing needle and thread and material?  We went to the storage unit and I was able to find the sewing box, but there were no material scraps inside.  I could see the material box, but I could not get there!

In town there is a great little shop called Angels in the Attic – I went in there and for $1.31 I was able to get material and 2 types of lace.  Stella was very excited, but before she had time to make a new dress we had some time to waste in town and so I took her into Angels and she found another piece of fabric she thought would work nicely.

It was  a snowy day and I told Stella that I would help her make Big Baby’s dress, but before I could do that Stella had already cut out half of the dress using another dress as the pattern.  The dress was a little small – so for the other half we made it extra big -so that when Stella sewed the two pieces together it would make a dress that would fit.

 

Stella cut the fabric, sew it together (with some help from mom) and put the dress on Big Baby – she was so proud.  She is still trying to decide whether or not she is going to add some lace – so I will just have to wait and see what the decision is or that the dress has changed!

Chocolate Banana Bread

For some reason of late I have been craving chocolate – not sure why.  Now don’t get me wrong I love my chocolate – and maybe I am craving more lately since I know that I cannot just walk out the door and down the street to get some good dark chocolate or a homemade dessert at the local coffee shop.  Whatever it is – I have had chocolate on the brain.  I decided to take my regular banana bread recipe and add some other ingredients.  This one is a definite keeper and was a hit at snack time with adults and kids alike!

Chocolate Banana Bread

Ingredients

1/2 cup butter (softened)
3/4 cup honey
1 egg
3/4tsp. baking soda
1 cup flour (can use either unbleached white or wheat or a mixture)
1/4 cup hemp seeds
1/4 cup flax meal
2 Tbl unsweetened cocoa powder
1 Tbsp. baking powder
1/2 tsp. salt
Vanilla (optional, I just pour some in)
Cinnamon (optional, I just sprinkle some in)
3 mashed bananas

1. Cream butter and honey until light and fluffy.

2. Beat in egg, vanilla and cinnamon, if using.

3. Add in dry ingredients.

4. Mash the bananas in a separate bowl.

5. Combine the bananas with the dry ingredient mixture.

6. Grease and flour a 8x4x2 1/2 loaf pan.  Preheat oven to 350 degrees.

7. Pour batter into loaf pan.

8.  Bake the loaf pan for 50 – 60 minutes, checking at 30 minutes and continue checking about every 10 minutes to prevent over cooking and the top burning.

9.  Take out of the oven and let cool.  Enjoy, we certainly did!

Uhauls’ Lack Of Customer Service

Moving is never an easy thing to do – the packing, the logistics, leaving of friends and familiarity, the learning of a new home and location.  Nerves are already on edge and emotions tend to come to the surface easier than at other times.  I wanted to share a story with you about my recent move.

As I contemplated about sharing this story – I also wondered why would a company that was based on customers feel the need to treat them they way they do?  The only thing that I can come up with is that for some reason it has become the corporate culture.  The reason I came to this conclusion is the fact that it was not just one person who lacked the skills for customer care but many.

I will not go into all the details of this move, but I wanted to at least share what happened so that others can make an educated decision as to what service to use if they decide to move themselves.  I wish I had done some internet research prior to deciding to use Uhaul because I am not alone in my disgust of how they treat their customers and the people who ultimately pay their salaries! Before I go into details – this whole thing makes me think of the book All I need To Know I Learned In Kindergarten – I think this should be required reading for all Uhaul employees.

I reserved my Uhaul truck more than a month prior to me needing it – but as I was to find out it does not matter if you reserve a truck – that does not mean that you are going to get that truck or a truck that will fit your needs.  I also decided as I was booking the rental to go ahead and hire movers through the Uhaul site – mistake #2.  About a week prior t the move I called Uhaul to update my phone information, making sure that my cell phone was listed on my record – so if need be I could be contacted my them – this I did 8 times and it was finally updated March 25, 2013!  The day before the pick up date Uhaul is suppose to call and confirm you reservation and pick up location – as of 2pm I still had not received a call – so I called them and was told that there was a possibility of me getting truck that I reserved but it was not guaranteed because it all depended on whether or not the person dropped it off and I would not be getting it in the morning but in the afternoon and instead of being 15 minutes away it was over 90 minutes away! That was my first meltdown.  I told the person that the moving help was to be there the next day at 11am and what was I to do.  At this point I was told that just because I reserved a truck did not guarantee me a truck and I should have not scheduled the movers for the same day as I was picking up the truck.  I told her this was unacceptable and what else could they do for me?  I was put on hold for 30 minutes and then when she got back on I was offered a smaller truck with a trailer – I then asked if it was the same amount of space and was hung up on.  The hanging up on seems to also be part of the customer service standards.  To make a long story of the day short – I was given a smaller truck and a trailer with a new location and a guarantee that it would be available for pick up at 9am.

My neighbor drove me to the Uhaul location and thank goodness she said let me wait until we know you have the truck.  Well there was not truck only the trailer – the truck had been dropped off at a different location and that location had already reserved it for someone else!  The manager at the location I was supposed to pick it up – called the other location and explained what happened and had them hold the truck for me.  My neighbor drove me to the new location  – 30 minutes away. When Uhaul guarantees a reservation and that is not met they are to refund you $50 – well the location that was suppose to rent me the truck couldn’t do it because I was not renting anything and the new location told me that I was not due the refund because I should just be happy that I got a truck!  I had also reserved packing blankets which this location did not have and I was told to go back to the other location to pick them up.  Here is where I had my next melt down.  This manager called the other manager and yelled at her and then hung up. I told her that I would just take what blankets she had and be on  my way – where I was told that she took care of her customers and she would get me my blankets – after 30 minutes of waiting one of her staff returned with blankets.  I was not sure I would make it back in time for the movers.

I won’t even really go into the movers – but they were unprofessional – taking phone calls while they were suppose to be loading.  The long and short of it here is that they only about a third of my belongings into the truck and left.  The next day after another meltdown seeing what was still left in my house – we realized that they did not wrap the furniture and many pieces were damaged and that they pretty much threw everything in.  Myself and two friends unpacked and repacked the truck and packed the trailer. That same day I contacted the moving help and was told that I had to make a complaint on line – but at the moment I did not have internet – that would have to wait. This is still on-going since they really cannot do anything for you – you have to deal with their sub-contracted movers – who do not return calls.

The trailer – thank goodness for my friends – one of which drove the truck for me to get the trailer hooked up.  The reason – well you can’t pull down the ramp on the truck if the trailer is attached.

Now everything was packed and we were ready to go.  None of us realized that with the trailer we could only go 55 mph – this added 4 hours on to our trip time.  Because the truck was pulling a trailer it also cost way more in gas than if I had the truck I originally reserved.

Now for the good part! I still had not been given the $50 refund for their guarantee.  On March 3 I called Uhaul and explained everything that had happened – more than what is here.  After being on hold on and off for an hour – the customer service agent came back on and said that he had spoken to his supervisor and she had spoken to her supervisor and they were going to give me a full refund.  He verified my credit card information and told me that a credit would be issued and appear on my card in the next 5 – 7 days.  I was to appreciative of what he did and thanked him many times.  This is not the happy ending!

I notice that a $50 credit appeared on my credit card – I called Uhaul on a weekend.  I was told that yes in my record it stated that I was to get a full refund and no there was not a manager that I could speak to about it, but that I would be contacted by the Hudson Valley office on Monday.  I was contacted by the office where I was told that I did not warrant a full refund and that now my record stated that I had requested a full refund and I had been denied. I explained the situation and yes after being told several time that that is not what happened I did raise my voice.  I was then put on hold and another woman got on the phone and told me I would not be getting any more money and that I really did not even deserve the $50.  I asked if anyone had spoken to the agent or the supervisors – no and it did not matter.  I asked for the number of headquarters which she would not give me and then she hung up on me.

I called the corporate office and was told that yes my phone call was recorded and they would have a supervisor listen to the call and get back to me within 48 hours.  Needless to say, and are you surprised?, but no one got back to me.  When I called to follow up I was told that they tried to call me but they could not get through – I asked what number and it was my old NY home number – of course my cell number was nowhere listed in my record. I was told that yes they listened to my call and yes I was told that I was getting a full refund, but that do not feel I am warranted one and therefore they will not be giving it to me. I told them that I cannot believe that they say one thing and do another and that it was beyond me why they would not do the right thing and do what they said they would. I was told that it did not matter and that they would not be giving me a refund and it did not matter what I did.

I explained to Stella what had happened, remember she is 9, and asked her what she thinks is the right thing to do?  She said give the refund.  I have taken it further and all I have to say to Uhaul is shame on you for not backing your agents and the word given to a customer.  If you plan on using Uhaul I highly suggest that you reconsider and if this story does not convince you – read the reviews on line – this tends to me their model of customer service.

My First Attempt At Borscht

With yet another winter weather system heading our way – I figured I needed to make a big pot of soup.  Also with the fluctuation in temperatures – the last of my root vegetables need to be used – since I use the screened porch as my root cellar.  I had a great borscht this week and thought I should try making one – since I had most of the ingredients handy.  A quick run to the store for some cabbage and I was ready to go.

I figured the soup would not take long to get on the stove to cook and simmer, but I was mistaken.  I kept one knife with me – but it is not a big one and the knives at the rental house not so good – even after spending some time attempting to sharpen!  Stella’s cousins were with us for the day and they all wanted to go and climb this big rock in the field across the way.  I told them we could go for a walk and attempt the rock climbing after I got the soup on. They were quite patient with me.

Vegetarian Borscht

Ingredients

2 – 3 large beets, peeled and cut into matchsticks
1 1/2 onions sliced and diced
2 large carrots, peeled and cut into matchsticks
1 parsnip, peeled and cut into matchsticks
2 – 3 cloves of garlic, minced
2 Tbl olive oil
1 1/2 – 2 cup cabbage, shredded
4 – 5 cups of vegetable broth/stock
1 cup of water
Salt and pepper to taste

1. Wash and prepare all your vegetables.

 

 

 

 

 

 

 

 

2. Heat the broth in a saucepan to a boil.

3. Heat the olive oil in a large soup pot and add all the vegetables except the cabbage.  Saute until soft.

4. Add the broth, water and cabbage and simmer for about 25 minutes.

5. Serve with some shredded beets on top, some sour cream, cheese, creme fraiche or naked.

The Delicious Dessert That Follows A Wonderful Meal, Cinnamon Bread

I had a wonderful dinner menu planned for my birthday evening, but circumstances altered those plans and post-poned the dinner. The rest of the week was no better for making the planned menu, so last night I made my birthday dinner menu: Snow Crab legs, broccoli and sweet potatoes followed by Cinnamon Bread.  Being in a rental home without all my kitchen ware, makes cooking and baking a little bit of a challenge!  I can only find so many things in the storage unit and I did bring a couple essentials with me to the house, but of course I did not think of everything.  I had to borrow a mixer to make this bread, but that is a good thing about living so close to family and having great neighbors and friends!

Cinnamon Bread

Ingredients

2 eggs (farm fresh, yeah!)
1/2 cup butter (softened at room temperature)
1 cup sugar
1/2 cup whole milk
1 1/4 cup flour
2 1/2 tsp baking powder
1 tsp cinnamon
1 tsp melted butter
1 Tbl sugar and 1 Tbl cinnamon, mixed together

1  Preheat oven to 300 degrees.

2. Beat together eggs, 1/2 cup butter and sugar until fluffy.

3. In a separate bowl combine the dry ingredients but not the combined sugar and cinnamon.

4. Mix the dry ingredients and the milk to the butter mixture and mix until completely combined.

5. Grease a bread pan.

6. Pour the batter into the bread pan and bake for almost an hour, done when a toothpick comes out clean.

7. Take the loaf out of the pan and place on a plate, pour the melted butter over the loaf and sprinkle with the sugar/cinnamon mix.

Serve and enjoy! This was the perfect ending to a wonderful meal!! Very airy, slightly sweet – would be good toasted with some butter – yum!!

Wire Beaded Necklace

Before leaving New York a friend of mine wanted to learn how to knit with wire.  My friend, Carla, is an incredible beader and I wish we had more time so that she could have taught me how to make one of her creations.  I wasn’t sure we were going to be able to fit it in – but since her daughter was coming to Stella’s going away hurrah party – she stayed!  I was so glad that she did – so that I had some adult company instead of just 9 kids.

Carla started off thinking she was going to knit a necklace, but in the end she knitted a bracelet.  I did do a necklace – but finished once we made it to Virginia. Carla is a tight knitter, but loosened up towards the end. She was so good and that same night she finished it at home!  I love crafting with others and it is especially nice when I can teach someone something new or that I am taught something new!!  I am hoping to learn many new crafts now being in the mountains of Virginia – basket weaving, wet felting, crochet and to better be able to use my serger – that definitely does not get the use it deserves!!

Wire Beaded Necklace

Items Needed

Beading Wire (gauge 26 – 32)
Beads
Metal Knitting needles (the smaller the tighter the knitting – I used Size 4)
Clasp

The smaller the gauge of wire the stiffer the wire.  For the necklace I used 28 gauge.

1. String your beads onto the wire.

2. Cast on 5 stitches.  Make a slip knot and place on your knitting needle.  Then cast on using the Thumb method.

Row 1 -7: Knit

Row 8:  This where I started using my beads and making a pattern.  K2, bring a bead up, K1, bring bead up K2.  The bead, depending on the size with either lay above the knitting or in the loop between the two stitches.

Row 9: knit

Row 10: K1, bring bead up, K3, bring bead up, K1.

Row 11: Knit

Repeat Rows 8 – 11 to create this pattern or create your own pattern.

End by knitting the last 7 rows and then bind off.

I wanted my necklace to be more like a choker, and it measured 12″ without the clasp.  Depending on what you are wanting will determine the length.

Weave in the wire on the cast on side, half way across and then attached your clasp – weave to the end and then weave the wire down some before cutting.

On the bind off side, weave the wire to the half way, attach clasp securely, and then weave the rest of the wire into the necklace.

I wasn’t sure how this would feel against my neck as a choker – I thought maybe the uneven edge would not be comfortable.  I have to say that it feels really good and I forgot that I was wearing it – it does not feel constricting at all!

What To Do With All Those Soap Pieces?

I was at my aunt’s house and she asked me if I had any ideas for how to use the little pieces of soap that she collects – and I think she is not alone.  I hate to get rid of those small soap pieces, but when they do get small they are hard to use in the shower!!  We talked about a few options and left it at that.  I thought about it a little more and figured I would give an idea a try.

We have relocated to Virginia from New York, but almost all of our belongings are in storage as we look for a permanent address to call home.  I had to see what I had with me and if what I had could be made into a soap piece holder.  Yes, I had some cotton yarn, had some needles that were not being used, but the only thing I did not have was a set of double pointed needles – no worries, I would figure that out.

Knitted Soap Piece Holder

Items Needed

Size 4 needles
Size 6 needles
Cotton yarn
Darning needle
Iron

Holder

CO 20 stitches with the size 6 needles

Row 1 – 7: Knit

Row 8: K5, yo (yarn over), K1, K2tog (knit 2 together), K4, yo, K1, K2tog, K3, yo, K2tog

Knit every row until piece measures 8 inches.

Next row (make sure the cast on tail is on the same side as the needle point): K2tog, yo, K3, K2tog, K1, yo, K4, K2tog, K1, yo, K5

Knit next 7 rows.

Bind off

You will notice that the holes look more finished on one side than the other, you want the nicer looking holes on the “right” side.

Fold the piece in half with the “right” sides facing each other – with a darning needle sew up the side seams.  Turn piece right side out and set aside.

Cord (I would recommend doing an I-cord, but since I did not have double pointed needles – I had to make my cord using the following directions.)

Cast on 2 stitches with size 4 needles

Knit every row until it measures 20 inches.

Bind off.

The cord will twist – press with an iron set on high.

Now to put it together…

1. Weave the cord through the holes of the pouch – making sure that it is not twisted. I started weaving in my cord at the hole near the seam and then the other end came out through the hole on the other side of the seam.

2. Match up the length of each end.

3. Again making sure the cord is not twisted, sew the ends together.

4. Fill with your soap pieces, cinch the top closed.  I knotted the cord so that it would stay closed.

Now you have a washcloth that will soap itself!!!  This is cotton – so you can through it in the wash to clean.  I love things that are useful, practical and resourceful!!

Stella Cooks Dinner….

Upon our leaving from New York, one of Stella’s friends gave her a kids cookbook (Better Homes and Gardens New Junior Cook Book).  They decided they could cook together from it using either FaceTime or Skype – love it!!!  The cookbook is not a great one, but if it gets kids to start cooking – then that is a good thing.

We are getting settled in Virginia and it is taking Stella more adjusting than me.  As an adult and one that has moved several times – I know that I will make friends and get into a groove of life here – for Stella this is all new.  She just left pretty much the only home she really knew, along with all her friends and all that was familiar.  There have been many melt downs and a lot of anger (which she has directed towards me) – but she will get through it and so will I – I just need to remember to not take the anger and outbursts personally.

After Stella went through the cookbook, she asked if she could cook dinner for me – I of course said yes.  She read through the ingredients and added the items needed to the grocery list. She would be making an appetizer and dinner – by the ingredient list I was not sure what I was going to be eating!!!  I asked her to take pictures so that I could blog about it – since I was told that I was not allowed in the kitchen!  On the day she was going to cook, she changed her mind and said that I could take pictures because she was going to need my help since she was using the oven.

Fruit & Peanut Mix (appetizer)

Ingredients

1/2 cup dried apricots (which we had dried over the summer)
1 cup Annie’s organic cheddar bunnies
1/2 cup dried cranberries
1/2 cup dried cherries and raisins (cherries we dried over the summer)
1 cup peanuts

1. Mix all the ingredients together in a bowl.  Stella decided to cut up the apricots, so they were bite size.

2. Can store the snack mix in an airtight container or plastic storage bag for 2 days or you can freeze for longer keeping.

Bake Sweet Potatoes with Toppings

Ingredients

2 sweet potatoes
Cheese
Broccoli

1.Preheat the oven to 375 degrees.

2. Wash and dry the sweet potatoes – you can use regular potatoes, but Stella loves sweet potatoes and we had many from our CSA delivery!

3. Line a baking dish with tin foil. Prick the potatoes with a fork and place in the baking dish.  Bake for 45 minutes to 1 hour – checking to see if done along the way.

4. While the potatoes are cooking, cut up the broccoli into florets.

5. Saute in coconut or olive oil the broccoli or you can steam them.  When done place in a bowl.

6. Fill a bowl with grated cheese (Stella used parmesan).

7. Place the potato on a place cut open and add some butter.

Stella set our table with flowers, a reserved sign and place cards.  It was a lovely dinner and I loved that she had wanted to do it!  Since she cooked I did the dishes.
